金马伦 特色蔬菜 2 西洋篇


西洋菜


西洋菜,(英文:Watercress),学名:Nasturtium officinale,别名豆瓣菜、水蔊菜、水田芥等,是十字花科西洋菜属的一种植物。

原产地在欧洲、地中海东部。罗马早期用作为医疗药用,抗坏血病。在西欧黑暗时代开始,视为蔬菜食物。14世纪的英国和法国有人工种植,1750年在德国有大量栽培,农艺传至新西兰、澳洲、南非等地方。1780年后出现于热带,如东南亚、台湾、中国广东、广西等。

西洋菜的营养丰富,含有蛋白质、多种维生素等营养成分。可作煲汤、清炒等。西洋菜具有通经的作用,且性寒凉,孕妇不宜多吃。



田七菜

田七菜,科学名为落葵薯,学名:Anredera cordifolia,又称川七、藤三七、藤子三七、小年药、土三七、藤七、马德拉藤、洋落葵。为落葵科落葵薯属的植物。原产地南美洲。

其块根似真田七 ( Panax notoginseng ),故坊间误名为田七。

叶片、嫩梢、株芽和地下块茎都可作菜用。用方法简单,有涮火锅、炒食、做汤、凉拌等多种方法,口感滑润。






龙须菜


佛手瓜(学名:Sechium edule)是一种葫芦科佛手瓜属植物,又称合手瓜、合掌瓜、佛手、隼人瓜、拳头瓜、梨瓜等。原产于中美洲,1915年传入中国,在中国江南一带都有种植,以云南、浙江、福建、广东、台湾最多。
 
佛手可作水果生吃,似黄瓜微甜爽口;也可作蔬菜,扑、炝、腌、炒、煮、做汤,果可煮食。龙须菜乃是其嫩茎。

佛手瓜植株只会在适合的温度下生出果实,在亚热带地区海拔高度需500米以上才能全年生佛手瓜。若处于摄氏0度或以下时便无法正常结果,且下霜或下雪时会导致藤冻伤。

帝王苗

帝王苗,质地柔嫩软滑,钙质含量。可作汤菜、爆炒、烫食、凉拌等。其味清香,咀嚼时如吃木耳一般清脆爽口,故名木耳菜。若煮的时间长了易出黏液。

科学名为落葵,学名:Basella alba 亦称胭脂菜、胭脂豆、木耳菜,是落葵科一年生藤蔓植物。是一种可供食用的蔬菜。

新马所称的帝王苗。
在广东、香港叫做潺菜。
四川称豆腐菜,软浆叶。
中国梅州客家話叫做藤菜或西洋菜。
在台灣,美浓客家話叫做斋嫲菜,福佬話叫做皇宮菜。




青龍菜


青龍菜实是韭菜 Alium tuberosum )。种植期间经黑暗处理,使其叶子脱青。此法成为漂白 blanching )。
  
听说是由一位姓刘的农夫研发耕种的,而且他是金马仑唯一栽种青龙菜的菜农。普通韭菜長了六星期后,砍下了葉子的上半部分。然後以黑網覆蓋,10天后收割。限制陽光使韭菜它們含較少的纖維,更加柔嫩可口。

青龍菜顏色淺綠,外觀似韭菜,口味也接近韭菜或青蒜,不過氣味淡一點,口感更爽嫩。不管是滾湯或是清炒都非常好吃。

Pasar Borneo GI @ Seri Kembangan





A Geographical Indication  ( GI ) is defined as an indication which identifies any goods as originating in a country or territory, or a region or locality in that country or territory, where the quality, reputation or other characteristic of the goods is essentially attributable to their geographical origin. Geographical indications may be used on any natural or agricultural product, or any product of handicraft or industry. 




Bario is famous for its rice and salt.  Pa’Umor is one of the best know salt-producing village.


 Gula apong is a very popular traditional sweetener processed from the sap of the nipah palm.

Tuak is a Sarawakian term for rice wine. In Sabah, it is called lihing.  

The distinct creamy taste of salted terubok is what makes it special, as it is not too salty and can be taken just like the fresh fish itself.


Dabai is one of many exotic fruits in Sarawak.  Its fruit is a prized seasonal delicacy.

Sekapur Sirih




Paan is a preparation combining betel leaf with areca nut widely consumed throughout South Asia, Southeast Asia and Taiwan.

Paan has many variations.  The basic ingredients are always : betel leaf, chalk and betel nut, as described by Ibn Battuta (1304 – 1377 ), a Berber Muslim Moroccan scholar and explorer.

“…the leaves of betel, puts a little chalk on them, 
and masticates them along with the betel."

Basic Ingredients :
Areca nut = fruit of Areca catechu
Betel leaf = fresh leaf of Piper betle
Slaked lime ( Calcium hydroxide )

Myanmar's Fancy Ingredients :
Cutch = dried bark of Senegalia catechu
Anise seed = seeds of Pimpinella anisum
Cardamom seeds = seeds of Elettaria cardamomum
Clove = dried flower buds of Syzygium aromaticum
Tobacco = cured leaves of Nicotiana tabacum
Liquorice = root chips of Glycyrrhiza glabra
