Nasi Kunyit
Nasi Kuning (yellow rice), or sometimes called Nasi Kunyit (turmeric rice), is an Indonesian rice dish cooked with coconut milk and turmeric. Nasi kuning might come in the form of a cone called a tumpeng and is usually eaten during special events, eg. birthday celebraton.
It is usually served/decorated with a variety
of side dishes such as :
shredded omelette,
serundeng
(relish of grated coconut and spices),
urap
(vegetable in shredded coconut dressing),
teri kacang
(fried anchovy and peanuts),
sambal goreng
(fried tempeh and potato caramelized in spicy sauce),
ayam goreng
(Javanese-style fried chicken),

Nasi Goreng Petai
First, sauté
3-5 cloves of minced garlic. Add in some
minced meat and diced carrot as well. Then,
add in the petai and sliced aubergine. Stir-fry all ingredients till properly cooked. Add in
extra salt to taste.
Lastly,
add in the cooked rice, stir to mix all the ingredients.
Serve
hot.

Pumpkin Rice 金瓜饭
First, mince
5 cloves of garlic and 100g pork. Then, cut half pumpkin into 2cmx2cm cubes. Cook rice separately.
Heat up the
wok, first sauté the garlic, then the minced pork.
Put in all
the cubed pumpkin, stir a bit. Pour in water
to cover the pumpkin, when the water is boil, reduce to middle flame.
Simmer the
pumpkin till the water is reduced. By then,
the pumpkin should had softened and cooked. Add in a generous amount of salt and pepper to
taste. Turn off the stove.
Add in the
cooked rice into the wok, stir to mix.
It’s a bit
sticky, yet deliciously sweet and savory. Can have it
on its own, as a single dish meal, or have it with other dish.
Best to serve
hot.

乌橄榄 Canarium pimela
橄榄,是橄榄科 ( Burseraceae ) 乔木。与属木犀科 ( Oleaceae ) 的油橄榄 ( Olea europaea ) 在植物分类学上崭然不同。
橄榄,即黑橄榄,又名乌榄,油橄榄。英文亦可指: Canarium odontophyllum,Canarium album 或 Canarium pimela。
我在诗巫菜市场看到的研制乌橄榄九成是 Canarium pimela,而非道地的 Canarium odontophyllum。

乌榄皮黑色,肉白有文。生橄榄焗浸热水,待肉变软,去水,再浸盐水数日,当咸菜吃。果肉以盐腌制,制成榄角、榄鼓。肉可舂烂制成块状或调成浆状,做榄糕和榄酱。此外它还可以榨油之用。果皮可作染料,其色鲜红。
榄角、榄鼓可用来炒饭,配粥,做榄角蒸排骨、榄角蒸鱼等。
榄核椎开取其仁,便是“榄仁”,是制糕饼的高级馅料。广式中秋月饼中的“五仁”之一。
其核作炭, 即“榄核炭”,乃上等炭。其火猛耐烧,少烬无杂味,为潮州“功夫茶”必用。榄核雕刻是广东有名的手工艺之一,已入选了中国国家级非物质文化遗产名录。

牛肉丸一锅饭 Ongrizinal Beef MeatBall One-Pot-Rice
One pot rice is a fast way to prepare a meal that comprises carbohydrate, protein, and greens.
Normally, when cooking a one-pot-rice, additional water is added.
So, as I cook 2 cups of rice, I put 3 cups of water instead of the usual 2.
Add in and stir to mix:
1 cup of sweet corn,
1 cup of green peas,
1 cup of diced carrot,
1 cup of diced onion,
20 pieces of beef meatballs, or fishballs, pork meatballs, chicken meatballs,
5 cloves of garlice, minced,
2 teaspoon of chili flakes,
3 teaspoon of salt.
Well, plug in the rice-cooker. Switch it on and wait to be served.

虾膏四角豆炒饭 Belacan Winged-Bean Fried Rice
Ingredients :
1. rice, cooked, loosened
2. prawn paste ( belacan )
3. anchovies
4. winged-bean x 20, chopped
5. curry leaves ( Murraya koenigii )
6. garlic, minced
7. chili
8. fish sauce
First, in a slightly excessive cooking oil, heat the prawn paste over small flame, until it fragrant.
Add in the minced garlic, curry leaves, chili and anchovies. Slowly, stir fry until everything is cooked. The anchovies will turn brown and hardened when its cooked.
Then, add in all the winged-beans. Stir for a while before putting in all the rice.
Flavour it with some fish sauce, a
nd flavour enhancer.

西芹炒饭 Celery Fried-Rice
1. Rice, kept overnight in fridge
2. Celery x 4 stalks, sliced
3. Carrot x 1, diced
4. Cabbage x 2 leaves, shredded
5. Chicken breast meat / lean pork meat, sliced
6. Onion x ½, diced
7. Sweet corn, a bit ( optional )
8. Garlic x 2 cloves, minced
Method :
1. Sauté garlic over heated wok
2. Put in the meat, stir
3. Stir in diced carrot ( carrot take longer time to cook, its needless to explain further why it should be the first to add in )
4. Add in sweet corn and celery, keep stirring
5. Add in cabbage and onion, keep stirring
6. Lastly, when all ingredients is 90% cooked, add in the rice. Stir well with light soy source.

Ongrizinal Fried Rice 王子の炒饭
Basic Ingredients :
Rice, cooked, preferably kept in fridge overnight
Carrot, diced
Sweet corn, kerneled
Green peas
Eggs
Method :
Saute some minced garlic over heated wok...
Add in diced carrot...
Next, the sweet corn and green peas...
Keep on stirring...
Add in the rice.... don't stop the stirring... ( I know its tiring )
Stir in some light soy souce... evenly
some white peper powder too ...
( no need to add salt, as the soy souce is already salty )

Garnish with sliced cucumber...
Serve hot

Glutinous Rice with Durian Jam
Last week, my colleagues shared with me an unique recie of durian jam. Then, last night YeeMeng gave me 2 durians. What a great timing !
Today, when I cracked open both durians, I found some Plagideicta magniplaga larvaes feasting in some compartments of the fruits. The aril I salvaged from the larvaes’ party can still be made into tempoyak, a fermented durian dish.
For tonight’s dinner, I will have steamed glutinous rice with durian jam.
Out of the remaining edible durians, I removed some of the aril, mashed with a spoon and heated over a pan with some water. Then, with the speed of lighting, add to the durian a watery mixture of 1 teaspoon of flour + 1 teaspoon of coconut milk powder + 1 spoon of sugar. Bring to boil and serve with glutinous rice.
Its creamy, sweet and rich with durian flavour.

One-Pot-Rice
Feeling a bit lazy today, so I cooked myself a one-pot meal. All in one pot…. carbohydrate, protein, fiber….
Just some frozen corn, frozen pea, frozen meat balls, an onion, a carrot cut into cubes…. all into ricecooker ( with rice and water, of course ). Seasoned with a bit of salt, flakes of chili, & pepper.

Nasi Kunyit 黄姜饭
Ingredients A :
1. Clove ( Cengkih (Malay), 子香, dried flower bud of Syzigium aromaticum )
2. Cinnamon ( Kayu manis (Malay), 肉桂 , dried bark of Cinnamomum sp )
3. Cardamon ( Buah pelaga (Malay), 白豆蔻, dried seed pod of Elettaria cardamomum )
4. Star anise ( Bunga lawang (Malay), 八角, dried fruit of Illicium verum )
5. Shallot ( Bawang merah (Malay), bulb of Allium cepa var. aggregatum )
Ingredients B :
1. Tumeric ( Kunyit (Malay), 薑黃 , powdered rhizom of Cucurma longa )
2. fresh Lemongrass ( Serai (Malay), 香茅 Cymbopogon citratus )
3. Coconut milk
4. Rice
Method :
1. pre-soak rice in tumeric powder for few minutes. Wash and drain.
2. saute Ingredients A.
3. cook the rice with coconut milk, fresh lemongrass, and Ingredients A.
4. add salt to taste.
Serve with chickencurry, beef curry, rendang, prawn sambal, or anything nice.

Yam Rice 芋头饭
Sauté pounded Sarawak dried prawn with minced pork meat. Add in diced yam, simmer till softened. Make it extra salty.
Cook rice with half amount of water than normal. When the rice is almost cook, mix in the cooked yam, and continue cooking till the rice is completely cooked.
Note : If the water is too much, the yam rice may ended up soggy & sticky. Otherwise it will be just nice . … not too dry, not too damp … nice granules of rice grains

Ongrizinal Nasi Lemak 王子の椰浆饭
Nasi lemak is rice cooked with pandan flavour extract and coconut milk.
Serve with sambal bilis, hard boiled egg, sliced cucumber, roasted peanut and deepfried anchovies.. I personally develop a exquisite taste to have it with curry dahl.
