Ongrizinal Cecah Cili v2.0

Ongrizinal Cecah Chili v1.0

Cecah cili is chili dipping pounded with a stone mortar ( lesung ).  Often serve fresh with deep-fried food or ulam ( salad ),  and sometimes serve straight from the lesung itself !

 

It is hot and sour, thus very appetizing.  




The ingredient varies.  Here, I use the usual chili, shallot, garlic and sugar.  Plus the special lemongrass and torch-ginger flowerbud and tomato.   Instead of lemon or lime for the sourish taste, I use Chinese vinegar instead.

Daikon & Carrot Soup + Bittergourd Tempura




Daikon & Carrot Soup
A carrot and a daikon, with a meat for the umami taste and protein.  
The meat can be beef or pork.  Chicken is not recommended. 

Add in a few of dried scallop for extra flavor. 

Slow-cook from 8am till 6pm.  Add salt and aji-no-moto for flavoring.



Bittergourd Tempura
Slice a bittergourd.  Mix with a little bit of flour and chicken essence.

Heat the oil.  Deepfry the bittergourd till slight golden-coloured.

Ongrizinal Sirap Bandung


Sirap bandung is a popular drink in Malaysia.  It consists of sweetened condensed milk and rose cordial syrup.


However, I believe that sweetened condensed milk may be replaceable with fresh milk, evaporated milk, powdered milk, and even soymilk.

 And thus, voilà! Sirap bandung of soymilk !!!!  It sure looks similar, with a faint taste of soymilk…

麻坡豆腐 Ongrizinal Muar Tofu


不是写错字。
看似麻婆豆,却不是。
实为烏打豆腐。顾名思义,即烏打( Otak-otak ) 与豆腐的结合体。
烏打的鲜甜、麻辣,加上润滑的白豆腐,是一种全新的味蕾享受。
烏打是麻坡 ( Muar ) 的名产。一包烏打加一包白豆腐,乱炒一下,便是一道下饭的菜肴。即快、又方便美味更不在话下。


麻婆的样式,麻坡的味道。故,名麻坡豆腐。

Ongrizinal Papaya Milk



Papaya is not cheap nowadays, it costs about RM3/kg…   

Yesterday, I came across papaya promotion at a local wholesale market, its only RM1.50/kg.  So I bought one.  Cost me about RM1.50.


Upon reaching home, I straightway cut the fruit originated from the tropics of Americas, and devoured half of it. 

Another half of it, I blend it with milk powder and some water… and voilà ! 2 big mugs of papaya milk.   The best drink in the heat of January night.

( Milk powder is the best alternative when fresh milk is no where to be found.  Its easily available, at least in my kitchen. )

Ongrizinal 茄汁鱼


我不爱买鱼、膛鱼、煮鱼、吃鱼,原因是它的腥和刺。没有腥、刺的鱼 哪儿找。。。

Julia 煎了条鱼,又切了車厘茄,大伙儿们吃不完,交代给我解决。昨天的芥菜遗漏了颈部在雪柜。。。

现成了煎鱼、番茄、菜颈,再切粒洋葱便可做茄汁鱼了!


首先,先煎热鱼儿。然后炒熟番茄、菜颈、洋葱,倒入些茄汁,撒点糖、盐。料汁倒上鱼儿 便可。

Ongrizinal 潮州蒸红皂鱼


材料 :
1. 红皂鱼 ( 又写紅鰽鱼或红潮鱼Lutjanus johnii )) 
2. 咸水梅 ( salted plum Prunus mume )
3. 潮州咸菜 ( salted Chinese Mustard Brassica juncea var capitata ))  

应该还有 :
1. 豆腐
2. 冬菇
3.
4. 番茄

Ongrizinal Soymilk


Ingredients :
1. soybeans, 300g
2. water, a lot ( for soaking & grinding )
3. sugar, according to your taste

Equipment :
1. a huge pot ( for boiling )
2. a blender
3. a cotton cloth bag
4. a filter, just in case



Method :
1. first, wash the soybean, of course.

2. then, I would soak the soybean overnight.  
- the hydrated soybeans will expand, so better soak it in a bigger container with more water. 
- longer soaking time would really help in blending and better milking.  
- to avoid the soybean turn bad in room temperature, I put them in refrigerator.  

3. next, scope in some soybeans into a conventional blender, add some water to it.  Blend thoroughly. 

4. pour the slurry mixture into a cotton cloth bag.  squeeze the soymilk by twisting the cloth.
- remember to hold the opening tight, to avoid the soybean cake leak out.  try everything possible to avoid soybean cake contamination.  
- if the soybean cake does get into the filtered soymilk, try another round of filtering with a fine filter.
- a 300g of soybean should be just enough for 3 times of blending and squeezing.
- I still prefer the conventional soymilk filtration via muslin cloth bag.   many a time, expensive, high-tech soymilk-makers fail to filter the soybean cake thoroughly, resulting in a powdery taste.

5. the final step is boiling.
- a 300g of soybean can milk some 3 liter of soymilk.
- pour the soymilk into a large pot, bring to boil.
- as the soymilk boils, it accumulates bubbles on the surface.  the bubble will eventually overspill.  so, standby at the pot.
-  at a point, the bubble will burst abruptly.  turn the flame down immediately, otherwise the bubble will surely overflow.  If so, it will be quite a mess to clean up.
-  allow the soymilk to boil for another 10 minutes.  this is supposed to destroy the trypsin inhibitor , protease inhibitors and LOX in the soymilk.
- any unfiltered soybean cake will settle at the bottom of the pot.  It will hardened and difficult to remove.  if boil for a bit longer more, it might get charred and spoil the taste of the soymilk.

6. the actual final step is actually adding sugar to the soymilk.
- sweetening with sugar not only adds in the sweet taste, it also enhanced the aroma of the soymilk.
- the soymilk sold in the market is either too sweet or too bland.  thus I prefer homemade.

Ongrizinal Superfood Salmon & Broccoli

Superfood is a marketing term used to describe foods with supposed health benefits.   However, the claim have little scientific basis.  Nevertheless the superfoods may have an unusual high content of antioxidants, vitamins, phytonutrients or other nutrients.


Chinook Salmon
Oncohynchus tsawytscha is high in protein, omega-3 and vitamin D.

Broccoli
Brassica oleracea Italica is high in vitamin C, folate, selenium, dietary fiber, diindolylmethane, glucoraphanin.  Despite my usual stirfrying method of cooking, broccoli is better to boil in order to reduce the anti-carcinogenic sulforaphane.

Carrot
Daucus carota sativus is famously high β-carotene.   Yet, carrot is best consumed cooked, rather than raw.  Carrot contain almost no starch, compare to other root vegetables.

Onion
Alium cepa contains phenolic and flavonoids, which are anti-inflammatory, anti-cholesterol, anti-carcinogenic, and anti-oxidant.

Garlic
Alium sativum, when crushed, yields allicin, an antibiotic and anti-fungal compound.  However, when cooked, allicin will be destroyed.

Ongrizinal Papaya Milkshake 木瓜奶昔


Papaya milkshake is a very popular drink in S.E. Asia.   

To prepare papaya milk, just add papaya to a glass of milk and blend with a food processor.  The quantity and quality of papaya and milk are crucial in making a good papaya milkshake.   The right combination is often well guarded and kept secret.  It is not surprise some papaya milkshake can’t even pass own taste bud, while some manage to sell it franchise worldwide.

Well, for me, papaya milkshake is another way of having papaya and milk.  I don’t have fresh milk in my fridge, so I substitute with formula milk.  For a cup of milk, I put in 2 slice of papaya.  In case its too thick, adding more milk will just do.

Ongrizinal Macaroni+ABC Soup


材料 :
100g 通心粉 macaroni

100g 瘦猪肉 lean pork meat

2 红萝卜 carrot
2 马铃薯 potato
2 番茄 tomato
1 洋葱 onion
5 蒜头 garlic
绍兴酒
胡椒粉


做法 :
红萝卜, 马铃薯, 番茄,洋葱,猪肉切丁。
蒜头剁碎。
锅里放半满水,煮沸后,加入红萝卜, 马铃薯, 番茄,洋葱,猪肉和蒜米。加入绍兴酒,胡椒粉和盐调味。
大火滚至材料微烂,再加入通心粉。
通心粉煮熟便可。

腊肠一锅饭 Chinese Sausage One-Pot-Rice



First, dice half a carrot.  Put aside with sweet corn and green peas…
In a rice-cooker, rinse-wash 2 cup of rice, add sufficient water.  Keep aside…

Then, skin and vertically-cut some 4 Chinese sausage…
Add in diced carrot, sweet corn, green peas, sausages and some minced garlic into rice-cooker…

Poor in 4 tablespoon of Shaoxing wine, and 2 teaspoon of salt.
Stir to mix, and switch on the rice-cooker to cook la !

Ongrizinal Limonda Brasileira


Again, its another typical Malaysian hot afternoon.  So, I made myself a lemonade.

First, squeeze out the juice of a lemon.
Add an equal portion of Brazillian Ypióca Empalhada Ouro which Jimmy brought back from Brazil.
Fill up the glass with chilled F&N Ice Cream Soda.


Voilà !! An ongrizinal refreshingly zesty, gassy-chilled, alcoholic yet non-intoxicating lemonade !

Ongrizinal Limonda Brasileira ( in Portuguese which means Brazillian Lemonade )

Ongrizinal Pineapple Juice 王子の黄梨汁



Add 300mL of chilled water to 300g of pineapple in a blender.  Blend till it smoothes.  If the pineapple is sourly, add in some sugar. 

I have yet to encounter a very sweet pineapple.  The sweetest of all still carries a bit of sour taste.  So, I would add a tablespoon of sugar to my concoction.

Chilled water is added, rather than ice cubes, as I wish to have a watery juice, not a ice-blended.  I wouldn’t want to chill the juice in the fridge, as the fibrous part would float on top.  I also wouldn’t want to add ice cubes to the juice to dilute it.  So, chilled water is the best choice.  In fact, I pre-chilled the pineapple in the fridge prior to the blending. 

Instant chilled Ongrizinal pineapple juice !

Ongrizinal Stir-fried Rice Vermicelli 王子の炒米粉

Ingredients :

Rice vermicelli x 1 package
Fish cake x 1 package
Carrot x 1 piece
Choy sum  x 2 stalks
Dried shitake mushroom x 5 pieces
Lean pork meat x 100g
Light soy sauce x 10 teaspoon
Charsiew sauce x 2 teaspoon
Onion x 1 piece
Garlic x 5 cloves
Pepper powder















Method :

First soak the rice vermicelli, Sarawak smoked prawn, and dried shitake mushroom in cold water till they softened. 
Pound the Sarawak smoked prawn.
Slice the shitake mushroom, fishcake, and onion.
Clean and cut the choy sum to about 3-4cm length.
Julienne the carrot.
Mince the lean pork meat and onion.
Mix the charsiew sauce with half glass of water.

Using a big wok, heat the garlic in cooking oil till fragrant.   
Add in the pounded Sarawak dried prawn, stir till fragrant.
Add in all the minced meat, carrot, shitake mushroom, and fishcake...  stir-fry till cooked.
Lastly, put in all rice vermicelli, stir-in the charsiew sauce, light soy sauce and pepper powder as well... add additional water when necessary.
When the rice vermicelli is almost cooked, add in the onion and choy sum.  keep stirring till the choy sum is cooked.

Ongrizinal 白八珍


八珍,顾名思义,由八种珍贵药材配成。有获神,防党参,白芍,当归,熟地,炙甘草,枸杞子,川芎。

八珍乌黑黑、苦辛辛,又不好看、也不好喝。无奈大人们都爱煲来逼小孩喝。

其实,良药哪有不苦口的。不过,菜肴就不该难咽之理。
所以我就来个白八珍。挪掉黑黑的孰地、加入红枣,煲出白白甜甜的八珍。

Ongrizinal Baked Pumpkin


pumpkin, thinly sliced to 3 or 4 slices.

Preheat the oven at 150°C.
Add a bit of olive oil on pan.  Lay the pumpkin slices nicely.
Heat for about 30 minutes.

Serve hot.


Serving for 1 pax.
