Daikon & Carrot Soup + Bittergourd Tempura




Daikon & Carrot Soup
A carrot and a daikon, with a meat for the umami taste and protein.  
The meat can be beef or pork.  Chicken is not recommended. 

Add in a few of dried scallop for extra flavor. 

Slow-cook from 8am till 6pm.  Add salt and aji-no-moto for flavoring.



Bittergourd Tempura
Slice a bittergourd.  Mix with a little bit of flour and chicken essence.

Heat the oil.  Deepfry the bittergourd till slight golden-coloured.

Chinese Cabbage Soup + Vegetable Omelette


Chinese Cabbage Soup
 Cut ⅙ of a Chinese Cabbage into small pieces.  
Simmer the green in ½ pot of water for 2 hours.   
Add a piece of port for umami taste.

Add salt and aji-no-moto for taste.



Vegetable Omelette
 Dice ⅓ of a carrot and ½ of an onion.  
Stirfry the vegetables till cooked and softened.  
Beat 1 egg on top of the vege, mixed well.  
Ready when the egg is cooked.

牛蒡汤


牛蒡(当然要)切皮,切片。
同瘦肉熬汤。

盐、味精(加了提味,提高生命品质)调味即可。





玉米粉葛汤





材料:
玉米,切半
粉葛,去皮切块
猪肉

全部材料文火熬几个钟,剩一碗汤便可。
盐、味精调味。

味道 :喜欢就好,不喜欢也罢。

木瓜 风云



迈可种了棵木瓜树,结果累累。安妮煮了一大锅木瓜汤,迈可喝了午餐又晚餐,终于勉强给喝完。树上还有木瓜累累,难道要天天木瓜汤、炒木瓜、木瓜奶?

一粒给了米雪搅了木瓜奶。一粒给佳丽活生生吃了。半粒给王煮了汤。

可妮吃腻了王子料理。王子不会变化,木瓜汤里只有木瓜。安妮说,不如加入党参、玉竹、杞子,好喝多了!

王子照样画葫芦,还加了猪肉,慢熬三句中钟。熬出来了,王子还是不爱喝,小王子把一碗饭给送完,可妮还是不爱喝。

太甜了。爱人褒的汤水甜到入肺 !

Sea Cucumber with Leek Soup 海参韭蒜汤


Using small flame, simmer a pork soup with few slice of ginger, in a claypot.   When the soup is done, add in the sea cucumber and Chinese wine, cook for few more minutes.   Lastly, switch off the stove and add in the sliced leek.  Wait till the leek is cooked.  Serve hot with rice.

Claypot Beef with Daikon Soup


 Ingredients :
1. Daikon, 1 piece
2. Beef
3. garlic
4. pepper powder
5. salt to taste

Method :
1. slice the daikon vertically into 1” thick
2. cut the beef into ½” slice
3. put all the ingredients into a claypot
4. sprinkle some pepper power
5. fill in water till full.
6. simmer until the pot is ½ full. 
7. add salt to taste
8. garnish with spring onion (optional)

Variant of Chicken Soup

There are a wide variety of chicken soups, every household have its own recipe, sometime not just one but few recipes, depending on the ingredients.


Major Ingredients ( which are compulsory for cooking chicken soup ) :
1. Chicken, be it thigh/wing/drumstick/breast, boneless, cut/uncut, with/without gizzard/heart/liver  etc
2. Ginger, old/young, sliced/julienne
3. Sesame seed oil ( other type of vegetable oil would be less desirable )


Additional Ingredients ( which are not necessary, but preferred, usually can be added in combination of ) :

a. other meat
1. pork lean meat/liver 猪肉/, or
2. fish maw 鱼漂, or
3. scallop 干贝

b. mushrooms
1. Shiitake mushroom 香菇 ( Lentinula edodes ), and/or
2. button mushroom  蘑菇 ( Agaricus bisporus ), and/or
3. Judas’ ear 黑木耳 ( Auricularia auricula-judae ), and/or
4. white fungus白木耳 ( Tremella fuciformis )

c. wine
1. Shaoxing Rice Wine绍兴酒, and
2. Hakka wine 客家黄酒 or
3. Foochow red wine 福州红酒鸡

d. Chinese herbs
1. American ginseng 泡 ( Panax quinquefolius ), or
2. Chinese angelica 当归 ( Angelica sinensis ), with
3. Chinese date ( Ziziphus zizyphus ) and/or
4. wolfberries 枸杞 ( Lycium chinensis )

大雄 的 广西汤圆


这是大雄煮的广西汤圆。十足大雄的味道、乡愁和性格。

浓浓的鸡汤,看起来里很有家的味道。汤香里溢着八角气味,喝在嘴里八角味更加霸道。不过,多喝几口便习惯了。不爱八角的人肯定不爱喝,勉强不来。爱吃又随时有得吃的,也是一种幸福。

汤里份料十足,汤甜肉滑。咸咸的汤里隐隐可见珍珠般大的汤圆。习惯了甜汤圆,咸汤圆吃起来还是第一次。却也不难接受,即吃得饱、又暖肚来好睡觉。

大雄烧的菜如此,大雄的性格也如此。

泡菜汤 Kimchi Soup - Experimental Cooking


I sampled this kimchi soup in Midvalley AEON.   It was nice.  So I think it should be easy to prepare.  Just add in all the ingredients and voila !!!
First, I cut into small pieces some Chinese cabbage, carrot, tofu and a bit of meat.  In a pot, fill in a bowl of water, bring to boil.  Then put in some kimchi and all other ingredients.  Boil for a while till softened.  Garnish with chopped celery leaves.
Serve hot with rice..


…. the taste…… so so niah..

豆腐羹 Tofu Soup


Soft tofu  水豆腐 – 1 piece
Crab stick  蟹柳 –  4 piece
Egg 鸡蛋 – 2 piece
Oyster/Button mushroom – 蘑菇 100 g
Mince pork  猪肉碎 – 100 g
Carrot  红萝卜 – ½ piece
Garlic 蒜头 – 3 cloves
Corn flour  薯粉 – 3 tablespoon

Shaoxing rice wine  绍兴酒
Salt  食盐
Black pepper powder  黑胡椒粉



First, slice the crab sticks into ±3mm thick, julienne the carrot, and mince the mushroom and garlic.  Keep all aside.

On a wok, heat up some 1 tablespoon of cooking oil, sauté the mince garlic until fragrant.  Then stir in the mince pork.

Once the pork is almost cooked, pour in 1 soup-bowl of water.  When the water is boil, put in the sliced crab sticks, minced carrot and julienned carrot, bring to boil.

Meanwhile, beat the eggs in a bowl.  In a separate bowl, mix the corn flour with some water.  

When the soup is boil, stir in the beaten egg.  Straight after that, stir in the corn flour.  The corn flour will thicken the soup.

Finally, add some Shaoxing rice wine, salt and pepper to taste.

Ongrizinal ABC++ Soup

Being a ‘toothless tiger’ for the past few days, soft-foods are the only choice I have.  
Yet, having rice porridge for 3 consecutive days is too cruel even for a ‘toothless tiger”.

So, tonight I change my menu.  ABC soup it is !!!



First, painstakingly remove kernels from 3 cobs of sweet corn.
Put in a pot filled with 1/3 portion of water, bring to boil.
While waiting for the water to boil, cut 1 carrot , 2 onions, 3 tomatoes, 4 potatoes and some 100g of pork lion into pieces.  Add all the ingredients into the pot, add some black pepper powder too. 
Simmer for a long long time ( > 1 hour ) till all the ingredients softened, especially the pork.
( add in more water if the soup reduced too much ) 
While simmering, add in 4 eggs, allow to boil.  By the time the soup is done, the eggs are all thoroughly hard-boiled.  Take out the eggs, remove the eggshell, and put them back into the soup.
Add some salt to taste.  Serve hot., with or without rice. 

Normally, ABC soup consists only carrot, onions, tomatoes, potatoes and pork ribs.  This time, I add in sweet corn and eggs,  so it is actually an upgraded ABC soup.

I call it ABC++ soup.  
Another one-pot-meal enough for 4 person !!!

Cream de Corn


近来比较无齿,吃软不吃硬。几天下来,餐餐吃粥。

今天心血来潮,不想吃粥。家里又没有什么液体食物,亦没有婴儿食品。只有孤孤单单几条玉蜀黍。

来个西式玉蜀黍汤吧 !

首先,费尽余力把玉蜀黍一粒粒摘下,盛了满满的一碗。
再把蒜米剁碎、以牛油微炒。放入玉蜀黍粒,加水,煮沸,转小火慢煨至熟,芬香满楼。
另外两汤匙面粉、牛奶粉冲水 。加入玉蜀黍汤,搅匀。加盐、胡椒粉等调味。
最后,倒入搅拌机,搅成半液状。


很意外地,卖相不错。不过不是很好吃(好喝)。玉蜀黍的余渣太多,吃多了腻口。可能用罐装玉蜀黍比较好。

牛蒡瘦肉汤 Gobo Soup


牛蒡削皮、切片。瘦肉切片。
锅内放水煮沸,放入牛蒡、瘦肉、枸杞,煮沸后,小火煮20分钟左右。
加盐调味即可。





牛蒡是菊科牛蒡属植物,又名东洋参、东洋牛鞭菜、白肌人参,果实名恶实、大力字。牛蒡原产于中国,约10世纪时传入日本,日据台湾时大量种植。

在中国古代,牛蒡是药食两用的食物。牛蒡根细嫩香脆,可炒食、煮食、生食、或加工成饮料。

牛蒡含丰富植物纤维,天门冬氨酸 ( aspartic acid ),精氨酸  ( arginine ),钙质 ( calcium ),  镁( magnesium ),  锰( manganese ),  锌( zinc )等。

当归苋菜汤



苋菜,江鱼仔洗净备用。
蒜头剁碎,爆香。微炒江鱼仔,加入一大碗水或高汤。
下数片当归,小火微熬数分至出味。加苋菜,微滚。
食盐、味精调味即可。

菜心鱼丸汤


烧菜这话儿没有人生下来第一天就会的,也没有人活了几十年还完全不会下厨 。事在人为罢了!


这是一道人人都可煮的一道菜 : 鸡肉丸菜花汤。主要材料有鸡肉丸,菜花,还有当然不可少的 - - 水。配料、调味有蒜头,盐,味精,胡椒粉

首先,蒜头去皮、剁碎( 别见血了 )
鸡肉丸数粒。( 爱吃就多放 )
 ( 不解冻也行,不切也行 )
菜花数根,洗净。( 可能会有沙、虫。不干净也不相干,照吃!)
菜梗与菜叶分开,切短。手折、刀切都行。

先热油,爆香蒜头。加入鸡肉丸,微炒。
加约一大碗水,煮沸数分。先下菜梗,后下菜叶。加盐、胡椒粉、味精调味即可。
( 别夸张加入一汤匙盐,白糖当味精,胡椒粉整瓶! )

Soup •ABC• 汤














This is a very simple soup, yet difficult to master.
For some unknown reason, it is widely known as ABC soup, maybe for its easy preparation, as easy as A-B-C.

Its just simmering all the ingredients till they softened, yet not till they mashed.

The ingredients are :
Pork.  Preferably pork ribs, yet any boney pork is acceptable.  I personally prefer lean meat.
Carrot, potato, tomato, and onions.  All cut in big pieces.
A few cloves of garlic.
Coarsely grounded black pepper.  And salt to taste

However, the exact quantity of each ingredients varies for every recipes.

盖菜汤


盖菜,  GuaCai ( in Hokkien ), mustard green, is most probably Brassica juncea foliosa, 是芥菜的变种。

盖菜或清炒、或煮汤,都美味脆嫩。把盖菜同江鱼仔同滚片刻,就是营养丰富的一道菜了。

ABC Soup


Ingredients

Meat, 250g - be it chicken ( breast, drumstick, quarter or whole ), or pork ( knuckle, spare ribs, belly, etc ), but not beef.
Potato, x 3  – peel, and cut into chunks
Tomato, x 2  – cut into chunks
Onion, x 2  – cut into chunks
Pepper and salt to taste


Method :
Put all ingredients into a pot half-filled with H2O, simmer for 30 minutes.
Serve hot.
( That’s super easy !!! )



Now, the difficult part is to figure out the meaning &/@ origin of the name.    

Why is it called ABC Soup?   
It is definitely not because of  the ingredients resembling the alphabets.  
Or in anywhere related to the Alphabet pasta. 
Or is it acronym of Air Batu Campur ?   Ali Beng Chandran ? Certainly not !
All Boleh Campur  perhaps ?

Is it because it is easy to prepare, as easy as A-B-C ?

A question remain unanswered.



Well, why don’t try it yourself sometime and chew it over?
