以形补形

“以形补形” 的理论是中医中重要的“取象比类”思维的延展,是一种取于形象归于抽象再用于形象并辅于生活经验矫正的方法论。它不是完全可以全套照搬、更不能按字面意思来解释。


孙思邈 ( miǎo ) ( 541 或 581 – c 682 ) ,唐朝京兆华原(现陕西耀县)人, 创立了“以脏补脏”和“以脏治脏”的理论。他利用羊骨粥来治疗肾虚怕冷;以羊肝来治疗夜盲雀目;用鹿肾医治肾虚阳萎。



民间流传的“吃啥补啥”,如:木瓜丰胸、猪脑补脑、虎鞭壮阳、以肝补肝等,就不可盲目跟从。

科学可取:以血补血、胡桃补脑。

猪肝汤 Pig Liver Soup

1 piece of pig liver, slice into thin slices, about 3mm thick.  My blunt knife makes the slicing a painful task.   

Julienne some ginger, fry them in sesame seed oil over small flame until golden and fragrant.   

Pour in a bowl of water, bring to boil.  Add in the sliced pig liver.

Bring to boil for a while.  Add salt and flavour enhancer to taste.

Pig Liver Soup + Noodle 猪肝面汤


Ingredient

1. Pig liver 猪肝, 100g, sliced
2. Ginger , 10 slice
3. some Foochow red wine 福州红酒
4. some Sesame seed oil 麻油


Method

1. heat the sesame seed oil
2. sauté the sliced ginger till fragrant
3. put in the pig liver, sauté till partially cooked
4. pour in the Foochow red wine, stir a bit
5. pour in 1 liter of water, bring to boil.  Don't overcooked
6. add salt to taste



serving suggestion :
can have it with rice, or noodles.
