Braised Chicken & Pork Belly with Judas's Ear




While preparing the ingredients for Braised Chicken with Judas’s Ear,  I can’t find enough chicken for the dish.  Less chicken meat means relatively lots of Judas’s ear… that’s kinda off balance. 

It was too late to abort the cooking, as I had already soaked the Judas’s ear.   Out of desperate, I decided to top up with pork belly instead.

Midway during simmering, out of nowhere, I pour in some rice wine.    

Surprisingly, it turn out quite okay.

黑木耳焖鸡 Braised Chicken with Judas Ear

To prepare :

50 g dried Judas Ear 黑木耳 ( Auricularia auricula-judae ), soaked for about 30 minutes, sliced…
2 chicken thigh, cut, marinated with soy source for about 30 minutes…
Ginger, sliced…
Garlic, minced…
Sesame seed oil



First, saute the ginger with sesame seed oil …  add in the garlic as well…   then add in the chicken and stir fry till half-cooked…  transfer everything into a pot to simmer, don’t forget the Judas ear…  simmer for about 30 minutes till the Judas ear is cooked…  add some salt and pepper to taste…..  voila !

Braised Chicken with Judas's Ear 鸡肉焖黑木耳


1. Pre-soaked dried Judas Ear 黑木耳 ( Auricalaria auricula-judae ) for 30 minutes or until it softened becoming a jelly-like texture, cut into bite size ;

2. Sauté sliced ginger in sesame seed oil ;

3. Put in cubed chicken meat, and sauté till partially cooked ;

4. Put in the Judas Ear, and simmer till cooked ;

5. Add salt to taste.

6. Alternatively, can add in button mushrooms ( Agaricus bisporus ) or shitake mushrooms ( Lentinula edodes ).
