Apium graveolens dukce

芹菜，旱芹，Celery。

叶柄炒食，煮汤，沙拉。清脆可口。微香。

株高约20-50cm。叶柄肥长，沟状。

原产欧洲。由高加索引入。

含大量芹菜素，钙质，铁质。

Coriandrum sativum. Selinum coriandrum

芫荽（yánsui ）， 胡荽，芫茜，香菜，Coriander，Ketumbar (Malay)。

芫荽叶一般是切碎撒在汤上，也有用来直接炒菜肴。

芫荽耔晒干后、磨粉，用于印度、阿拉伯等菜肴里。

其味特殊，香与臭因人而异。

株高约10-15cm。

原生于地中海沿岸。西汉张骞于前138-119出使西域时引入中国。8-12世纪传入日本。

含癸醛Decanal Linalool，芳樟醇 p-Cymene，水芹烯 Phellandrene，  对伞花烃Camphene, 岩芹酸Petroselic acid 等。

Petroselinum hortense, P.crispum Neapolitanum Group, Apium petroselinum

香芹，旱芹，洋芫荽，荷兰芹，法国香菜，意大利香芹，欧芹，Parsley。

多用作香辛调味，沙拉配菜，佐汤，盘边装饰。

株高约10-20cm。

原生于地中海沿岸。相传由西汉张骞自西域传入中国。

含豆蔻醚Myristicin， 芹菜醛 Apiole，类黄酮Flavonoid， 香豆素 Coumarin。

品种 : 皱叶香芹 ( Curly Leaf Parsley  - P. crispum Crispum Group ) ; Parsley Root ( Hamburg Parsley - P. crispum Radicosum Group, P. crispum tuberosum )

西芹炒饭 Celery Fried-Rice

Ingredient :

1. Rice, kept overnight in fridge

2. Celery x 4 stalks, sliced

3. Carrot x 1, diced

4. Cabbage x 2 leaves, shredded

5. Chicken breast meat / lean pork meat, sliced

6. Onion x ½, diced

7. Sweet corn, a bit ( optional )

8. Garlic x 2 cloves, minced

Method :

1. Sauté garlic over heated wok

2. Put in the meat, stir

3. Stir in diced carrot ( carrot take longer time to cook, its needless to explain further why it should be the first to add in )

4.  Add in sweet corn and celery, keep stirring

5.  Add in cabbage and onion, keep stirring

6.  Lastly, when all ingredients is 90% cooked, add in the rice.  Stir well with light soy source.

清炒西洋芹 Stir-fried Celery

3 stalk of Celery ( Apium graveolens val dulce), peel the stalk longitudinally, then sliced
1/2 carot, sliced.

saute some garlic, add chicken meat, or squid, or anything of your liking.
( may add some cauliflower / broccoli / etc )

add the carot and celery,
some water too
stir fry till cooked.

add some oyster source.
lastly add salt to taste.
