Brinjal ( Solanum melongena ) is a plant species in the nightshade family Solanaceae.  


Botany

The fruit is botanically a berry.  There are different cultivars of different size, shape and colour.  

It was originally domesticated form of the wild nightshade species thorn or bitter apple, Solanum incanum, with probably two independent domestications : one in South Asia and one in East Asia.

There are 3 recognized varieties :
S. elongena var esculentum – common brinjal, including white varieties
S. melongena var depressum – dwarf brinjal
S. melongena var serpentum – snake brinjal


Etymoloty

Eggplant
The name eggplant is usually used in North America and Australia.  First recorded in 1763, eggplant was originally referred to the white cultivars, which look very much like hen’s egg.  The white, egg-shaped varieties of the eggplants are also known as ‘garden eggs’ and ‘vegetable eggs’

Aubergine
The word aubergine and brinjal were derived from Arabic word bāḏinjān ( باذنجان‎).  Yet, āḏinjān is itself a loan-word from Dravidian language, which in turn borrowed from Indic languages.


 Culinary

The fruit is mostly purple, spongy, absorbent, but low in both macronutrient and micronutrient.  However, its capacity of absorbing oils and flavors make it popular in culinary.

Raw brinjal can have a bitter taste, with an astringent quality, but it becomes tender when cooked and develops a rich,


 Fun Facts

The colour of purple skin of brinjal is due to the anthocyanin nasunin.

The browning of the brinjal flesh is due the oxidation of polyphenols.

Spanish Omelette


This is a dish introduced by Jimmy : Spanish Omelette.

It is an omelette made with eggs and potatoes.  Supposedly a traditional dish from Spain, my version may be differ from the original Spanish tortilla.

First a potato is cut into small dice, then sauté until soft.      

An onion is cut into small pieces and added into the potato.
 

 Finally beat 2 eggs into the mixture and stir will.  

 Form it into a round shape and grill slowly.  

Turn the omelette carefully so that its not broken into pieces. 
 

 Serve hot.

ABC Soup v 2020.1

2020版,没放马铃薯,以金瓜(Pumpkin)代之。

谁知道为什么叫ABC 汤?






原来ABC是指汤料里的维生素。

A = 胡萝卜、西柿子
B = 玉蜀黍、洋葱、马铃薯

C = 西柿子、洋葱、

而南瓜也含丰富维生素AC.

薏米柠檬水

外面风头火势,一点点就风吹草动。

咳一声,便人心惶惶。


来一大大杯薏米柠檬水呗。


Fried Rice ( KHI-Style )





James ordered today’s lunch : Fried Rice.  He wanted it ala KHI style.
( KHI is his kindy cum daycare for 3 years. )

The fried rice should ONLY contain bean, carrot, hotdog ( sausage ) and fried egg ,  James warned !

The carrot must be finely cut ( Brunoise ).  In order to get the Brunoise dice, I first peel the carrot with fruit peeler, then fine Julienne it, and follow with vertical cut into small dice.  It’s not exactly a Brunoise dice, but it’s acceptable by James. 

As for the greens, James can’t say what kind of bean.  So I use baby French bean.   Same procedure : fine cut.

The hotdog is the easiest.   Just slice it.

The egg pulak, James said the white and yellow must be separated.  So, not scrambled.  Sunny side up with cooked yolk, irregularly cut.

Well, as till now, no graphic or photo to accompany the recipe.  So use your imagination.

When everything is ready, I ask James to ignite the stove for me.   As the oil heated, I let him to pour in all the finely cut ingredients into the wok.  

Now that he feels that he played some important role in preparation of the dish, off he go to his playroom.

So, I fry.   And fry.
Add in light soy sauce for flavor and coloring.

Secretly, add in another ‘secret ingredient’ for extra flavor.

When I ask James how’s the taste.
He tasted, and tasted, and commented : “OK !”











French Toast ( style chinois )


Amidst the nationwide Movement Control Order, 
what to put on the table became a mammoth daily issue.

What for breakfast today ?

French Toast, Chinese Style…



First, cut the roti into strips.   
It is easier to dip and fry, and easier to eat too.  
Not to forget its children-friendly.

Beat 2 eggs with chopstick ( Chinese style ! )

Dip the bread strips in egg, turn to coat both sides.

Cook bread in slightly greased nonstick pan 
on medium heat until browned on both sides.

Serve with Milo.
