Tapai Pulut Daun Getah

Tapai pulut is a traditional Malay fermented delicacy prized for its unique preparation and sweet, tangy profile. While modern variations often utilize plastic cups, the traditional method uses folded fresh rubber tree leaves (daun getah) to secure the fermenting rice into distinct hanging pouches.

Core Ingredients: Premium white or black glutinous rice (pulut) mixed precisely with crushed local yeast cakes (ragi).

Process: The prepared rice is packed into leaf pouches and fermented in a dark, warm space for 2 to 3 days.

Flavor : The process converts rice starches into natural sugars, yielding a sweet, moist, and mildly alcoholic flavor.

Leaf : The rubber tree leaves are non-toxic, pliable, and impart a subtle, authentic herbal aroma to the dish.

Cultural Context: Frequently served as a dessert during festive celebrations like Hari Raya, weddings, and cultural gatherings.
