Nasi Kunyit



Nasi Kuning (yellow rice), or sometimes called Nasi Kunyit (turmeric rice), is an Indonesian rice dish cooked with coconut milk and turmeric. Nasi kuning might come in the form of a cone called a tumpeng and is usually eaten during special events, eg. birthday celebraton.

It is usually served/decorated with a variety of side dishes such as :
shredded omelette,
serundeng (relish of grated coconut and spices),
urap (vegetable in shredded coconut dressing),
teri kacang (fried anchovy and peanuts),
sambal goreng (fried tempeh and potato caramelized in spicy sauce),
ayam goreng (Javanese-style fried chicken),
ampela ayam (chicken gizzard), hati ayam (chicken liver),
balado udang (shrimp in chilli),
perkedel (potato fritters).

焖鸡腿韭蒜 Claypot Chicken with Leek



















材料
1. 鸡腿一个,去皮去骨,切丁
2. 韭蒜一根,切长4cm
3. 马铃薯一粒,切丁

调味
4. 大蒜数片,剁碎
5. 绍兴酒,少许
6. ,少许
7. 生抽,少许

做法
1. 鸡腿且丁后以生抽、糖、绍兴酒腌泡。
2. 瓦煲加热、上油,微炒蒜米至香。
3. 鸡腿肉加入瓦煲,微炒。
4. 加入马铃薯丁,搅拌。
5. 微火焖熟。
6. 鸡肉熟后,加入蒜,熄火。瓦煲耐热,余温足以焖熟蒜根。

Variant of Chicken Soup

There are a wide variety of chicken soups, every household have its own recipe, sometime not just one but few recipes, depending on the ingredients.


Major Ingredients ( which are compulsory for cooking chicken soup ) :
1. Chicken, be it thigh/wing/drumstick/breast, boneless, cut/uncut, with/without gizzard/heart/liver  etc
2. Ginger, old/young, sliced/julienne
3. Sesame seed oil ( other type of vegetable oil would be less desirable )


Additional Ingredients ( which are not necessary, but preferred, usually can be added in combination of ) :

a. other meat
1. pork lean meat/liver 猪肉/, or
2. fish maw 鱼漂, or
3. scallop 干贝

b. mushrooms
1. Shiitake mushroom 香菇 ( Lentinula edodes ), and/or
2. button mushroom  蘑菇 ( Agaricus bisporus ), and/or
3. Judas’ ear 黑木耳 ( Auricularia auricula-judae ), and/or
4. white fungus白木耳 ( Tremella fuciformis )

c. wine
1. Shaoxing Rice Wine绍兴酒, and
2. Hakka wine 客家黄酒 or
3. Foochow red wine 福州红酒鸡

d. Chinese herbs
1. American ginseng 泡 ( Panax quinquefolius ), or
2. Chinese angelica 当归 ( Angelica sinensis ), with
3. Chinese date ( Ziziphus zizyphus ) and/or
4. wolfberries 枸杞 ( Lycium chinensis )

小小的一个无拉港新村是客家人的地盘,村里仅有一家规模较大的饭店。
饭店旁的一新村屋,经营小馆。座椅排放屋前,上面有高棚挡风遮雨,地上干净无油迹、亦无食物残渣。馆子三面无墙,通风又不焖热。也无抽风机、电视的吵杂声。
环境一流!

馆子打的是瓦煲肉骨茶的号子,亦以瓦煲肉骨茶为招牌菜。不过也有卖客家美食 : 黄酒鸡、猪脚醋等。

 我是为黄酒鸡而来。瓦煲里放足黄酒、香香醇醇的、亦酸亦甜。菜园鸡咬劲十足。
香、甜、热共聚一锅,边吃边抹汗!

Only in Sarawak : Wrapped Chicken

常听人家说 : 大都市的小孩不懂是好命还是不好命,没有爬过树、没抓过蝌蚪、没有赤脚到外面玩泥沙,甚至没有见过生鸡。鸡的样子,可能还以为是KFC卖的炸鸡那样。

这样说未免夸张了。没见过生鸡的样子,几乎是不可能啦!没见过真生鸡,至少书本、网际网络等都有得照片看啦!

生鸡固然不是周街跑。最多生鸡出没的地方不外是菜市场了。在砂捞越的早市,鸡贩卖鸡出奇招,包没走鸡!

Cari Makan @ Ipoh - 老黄芽菜鸡

到了怡保 (Ipoh) 几次,都没吃到芽菜鸡,有一点遗憾。

很久以前吃过老黄芽菜鸡,却忘了它的味道。只记得老黄的生意兴旺,客似云来。午餐、晚餐时间,店里人山人海,座无虚席。斩鸡声、叫菜声、冲茶声,声声入耳。

人多找位固然难。不过,若有幸霸到座位,一定很快就有得吃。老黄的伙计不但点菜快、出菜也快,不愧是老字号。有点真功夫!

芽菜肥短、脆口。白鸡香滑、又不油腻。河粉细滑、韧而爽滑。名不虚传!!!

Poison in our Foods : Formaldehyde





Formaldehyde甲醛 is an organic compound with the formula CH2O. It is the simplest form of aldehyde, hence its systematic name methanal.

A gas at room temperature, formaldehyde is colorless and has a characteristic pungent, irritating odor.  Commercial solutions of formaldehyde in water, commonly called formalin, were formerly used as disinfectants and for preservation of biological specimens.

In view of its widespread use, toxicity and volatility, exposure to formaldehyde is a significant consideration for human health.



Uses

Formaldehyde is used in photography, paints, explosives, as adhesive in making fiberboards, in textile industry to make fabrics crease-resistant, wet-strengthening for sanitary paper products, automobiles components, to make into foam for insulation, etc

It is also used as disinfectant in medical apparatus, for treatment for skin diseases, as treatment for parasites in aquarium, and in cosmetics and personal hygiene products to prevent bacterial growth.

Perhaps the most well known usage of formaldehyde is for preservation of human and animal tissues, and as a fixative for microscopy in histology.



International bans

In the EU, formaldehyde is banned from use in preservatives for liquide-cooling and processing systems, slimicides, metalworking-fuild preservatives, and antifouling products, under the Biocidal Product Directive.  The maximum allowed concentration of formaldehyde in finished products is 0.2%, and any product that exceeds 0.05% has to include a warning that the product contains formaldehyde.

In the United States, the allowable amount of formaldehyde emissions from these wood products to 0.09 ppm, in 2010 Formaldehyde Standards for Composite Wood Products Act.

In Canada, formaldehyde was declared a toxic substance by the 1999 Environmental Protection Act.




Contaminant in food

In the early 1900s, formaldehyde was added in fresh milk as a method of pasteurization.

In 2005, in Jakarta, Indonesia, the Indonesian government found that 60% of noodle shops in Jakarta had been serving noodles laced with formaldehyde.

In 2007, in Vietnam, formaldehyde was found in noodles of the national dish, Ph.  The food scares also involved dangerous banned pesticides in fruit and vegetable, and carcinogen in soy sauce.

In 2010, 2 Carefour hypermarkets in Jakarta were found to had sold cendol contained 10 ppm of formaldehyde.

In 2011, in Nokhon Rachasima, Thailand, a sizeable quantities of rotten chicken treated with formalin were discovered.  

In 2012, some 25 tonnes of mackerel fish worth 1 billion Rupiah ( @ 1 million USD ) imported from Pakistan to Batam, Indonesia were found laced with formaldehyde.



Health Effects

In humans, the ingestion of formaldehyde has been shown to cause vomiting, abdominal pain, dizziness, and in extreme cases can cause death; in addition, there is limited evidence of a carcinogenic effect.

Formaldehyde inhaled may cause headaches, a burning sensation in the throat, difficulty breathing, and asthmatic symptoms.

菜心鸡肉丸汤



Ingredient

菜心 Choy sum ( in Cantonese ) ( Brassica rapa periviridis )
鸡肉丸 Chicken meatball



Method

把蒜头爆香。加入鸡肉丸、绍兴酒, 稍炒。
加入一碗分量的清水,煮沸。
放进菜心,滚一滚。
加少许盐,胡椒粉即可。






虽然是简单了点,不过方便、又有营养。清清淡淡的,有家的感觉。
鸡肉丸可以鸡胸肉、江鱼仔、瘦肉代之。

上汤苋菜


ingredient :
苋菜 Bayam ( Amaranthus sp )
参须 American ginseng ( Panax quenquefolius )
玉竹 Angular Soloman's-seal ( Polygonatum odoratum )
白芍 Chinese peony ( Paeonia lactiflora )
枸杞 Wolfberry ( Lycium barbarum )
鸡肉 Chicken  ( Gallus gallus domesticus )




Method :
Cut the chicken into small cubes, blanch it.
Put in all the herbs and chicken into a pot, simmer till cooked.
Lastly, blanch the bayam in the soup for few minutes.
Add salt to taste.
Serve hot.

Ongrizinal 白八珍


八珍,顾名思义,由八种珍贵药材配成。有获神,防党参,白芍,当归,熟地,炙甘草,枸杞子,川芎。

八珍乌黑黑、苦辛辛,又不好看、也不好喝。无奈大人们都爱煲来逼小孩喝。

其实,良药哪有不苦口的。不过,菜肴就不该难咽之理。
所以我就来个白八珍。挪掉黑黑的孰地、加入红枣,煲出白白甜甜的八珍。

大家不妨试试!

Braised Chicken & Pork Belly with Judas's Ear




While preparing the ingredients for Braised Chicken with Judas’s Ear,  I can’t find enough chicken for the dish.  Less chicken meat means relatively lots of Judas’s ear… that’s kinda off balance. 

It was too late to abort the cooking, as I had already soaked the Judas’s ear.   Out of desperate, I decided to top up with pork belly instead.

Midway during simmering, out of nowhere, I pour in some rice wine.    

Surprisingly, it turn out quite okay.

福州红酒鸡汤面线 Misua in Foochow RedWine Chicken Soup


Misua ( in Hokkien ) ( 面线 pronouce as mian xian in pinyin ) is vermicelli made of wheat flour.

Misua is originated from Fujian, China. In Foochow dominated Sarawak, it is served with Foochow redwine chicken soup . As it signifies long life, misua is a must-have birthday food.

It can be easily obtained from any groceries stores in Sarawak, in both fresh and dried form.












Cooking a misua is an easy task !


First, boil some water in pot. When the water bubbled, put in the misua.
In the blink of an eye, the misua will float to the surface, indicating that its cooked.
Serve hot with Foochow redwine chicken soup.

福州红酒鸡汤 Foochow RedWine Chicken Soup

Ingredients :

1. chicken, about 500g
2. shiitake mushroom x 10
3. dried wolfberries ( Lychium barbarum )
4. ginger, sliced
5. foochow red wine
6. sesame seed oil

alternatively, can add canned button mushrooms


Method :

1. heat the sliced ginger in sesame seed oil
2. add in the chicken, stir with foochow redwine till half cooked
3. transfer the chicken into a pot, add water
4. add in shiitake mushrooms and wolfberries
5. simmer till cooked.
6. salt to taste.

鱼鳔菜园鸡汤 Chicken Soup with Fish Maw


ingredients:
a whole free-range chicken, clean and cut.
10 piece dried shiitake mushroom (Lentinula edodes).
5 piece deep-fried fish maw.

method :
saute some ginger in sesame seed oil...
put in the cut chicken, stir-fry till half-cooked...
transfer to a pot, put in  some 3 liter of water...
put in all mushroom and fish maw...
simmer for 1 - 2 hours.



鱼鳔 fish maw is the swim bladder of a fish that control buoyancy,
found only in ray-finned fish
It is usually sun-dried, then deep-fried before cook.

菜园鸡 ( Ayam kampung, in Malay language ) is free-ranch chicken,
are usually sold at higher price ( > 120 % ) than normal chicken.

黑木耳焖鸡 Braised Chicken with Judas Ear

To prepare :

50 g dried Judas Ear 黑木耳 ( Auricularia auricula-judae ), soaked for about 30 minutes, sliced…
2 chicken thigh, cut, marinated with soy source for about 30 minutes…
Ginger, sliced…
Garlic, minced…
Sesame seed oil



First, saute the ginger with sesame seed oil …  add in the garlic as well…   then add in the chicken and stir fry till half-cooked…  transfer everything into a pot to simmer, don’t forget the Judas ear…  simmer for about 30 minutes till the Judas ear is cooked…  add some salt and pepper to taste…..  voila !

泡参片( American ginseng - Panax quinquefolius )
枸杞子(wolfberry - Lycium barbarum )
鸡肉 ( chicken )
干贝( scallops )

put all ingredients into a pressure cooker with 2 bowl of water, cook for 20 minutes.

Braised Chicken with Judas's Ear 鸡肉焖黑木耳


1. Pre-soaked dried Judas Ear 黑木耳 ( Auricalaria auricula-judae ) for 30 minutes or until it softened becoming a jelly-like texture, cut into bite size ;

2. Sauté sliced ginger in sesame seed oil ;

3. Put in cubed chicken meat, and sauté till partially cooked ;

4. Put in the Judas Ear, and simmer till cooked ;

5. Add salt to taste.

6. Alternatively, can add in button mushrooms ( Agaricus bisporus ) or shitake mushrooms ( Lentinula edodes ).

Braised Chicken with Dried Beancurd 腐竹鸡肉


ingredients

1. half-a-chicken, chopped to pieces, 650g
2. dried beancurd, pre-soaked, cut to pieces, 150g
3. a bulb of garlic, skinned, chopped
4. pepper
5. salt
6. and of course water !

Method
( erm......... as the method is almost same with any Chinese cooking of brasied dishes, I think I will skip the method this time.  I don't think not sharing the method will lead to a disaster.  Happy cooking  & bon appétit ! )

Chicken Braised with SoySauce 酱油鸡




Ingredients #1
1. chicken, cut to pieces, 500g
2. soy sauce, of couse, 2-3 tablespoons
4. sugar, a bit
5. pepper powder, a bit

Ingredients #2
1. shittake mushrooms, 20 pieces, pre-soaked
2. garlic, 2 bulbs, de-skinned


Mehtod :
1. marinate the chicken with soy sauce, sugar and pepper
for about 1 hour,
 2. saute the chicken till half-cooked,
3. put in the shittake mushrooms, and garlic,
4. add in water to slightly cover all ingredients,
( more water means extra time for simmers,
which lead to the chicken too soft)
5. simmer till the gravy is reduce to halve.
( or to your own preference )


optional ingredients :
1. 5-spice powder
2. star anise
3. potato
4. arrowhead
5. dried beancurd
